I just purchased your cookbook, and now have been going through those recipes and also many on your site! So excited to try some new recipes ~ just have a couple of questions ~
1- about tapioca starch, and arrowroot starch can those be substituted with xanthan gum? My concern is the starch turning to sugars, just lost some weight, and have more to go, so am being careful ~
Also, any recipes for a soft pretzel!? I miss those so!! I was wondering about using cassava flour? Your thoughts? And lastly, what is the difference of coconut sugar, coconut palm sugar and maple sugar?

Hey Nancy, these caramel cookie bars are still treats just like any other, they’re just made with less inflammatory foods. I wouldn’t recommend making these if you are looking to lose weight. Xanthan gum is a totally different ingredient compared to these starches so they are not interchangeable. If you really do want these then remember that they will be moderately high in sugar because they are treats not necessarily every day health foods.
